Thank you for your message. I would highly advise the M4300 series for your network redesign. All switches can stack within the series, the 10G models show the M4300-48X (XSM4348CS) for instance. Of course you want to use distributed link aggregation across stacked switches for highest availability. The M4300 offers Non Stop Forwarding (NSF) for absolutely zero service interruption across the stack should the stack master (management unit) fail.
Please have a look page 15 in the M4300 datasheet, I think you will find good topologies for each layer of your network. Let us know of any questions.
