Is it possible to "stack" the XS748T with DAC to the GS752TX?

No, the XS748T is standalone: it can be daisy-chained only with your GS752TX, but it won't be added to your stack.
S3300 Series Smart Managed Pro switches allow for mixed stacking with two M4300 10G switches:
- M4300-12X12F which is a 24p 10G switch (12 copper plus 12 fiber ports)
- M4300-24X which is a 24p 10G switch (24 copper with 4 shared fiber ports)
These two will be added to your S3300 stack, as per the indications in this Mixed Stacking application note.
Alternatively, you can also start a brand new stack with M4300 series: all 1G, 10G and 40G models can stack together.

Is there a alternative 10G 48 Port switch which is stackable with a 48 Port 1G?

M4300 10G models (48-port 10G models and others) can stack with M4300 1G models (24-port and 48-port 1G models), this is the only large scale, mixed stacking solution.
At this stage, there is no other alternative. Benefits are huge, though: up to 16 ports per 10G switch can be used for stacking, allowing for high performance, line-rate and redundant spine and leaf topologies with 1G models and their 4-port 10G.
