MR 60 as Access Point
I have an MR 60 with 2 satellites. I currently have it configured as a router, but what I need is to change that so it is configured as an access point to my Verizon router. I'm looking for a good video that explains how to make the change. I have been searching online but not finding exactly what I need.

I don’t mind saying I’m a bit confused. What I am looking to do is extend the range of my Verizon router so I have coverage on other ends and floors of my house. So I don’t believe I need two routers and maybe configuring the Nighthawk as access points is not the best way to go?

Yes. Can configure the MR for Dynamic or static for AP mode. Will work for you.

it still showing as an available router as well?
It would be helpful to have a screen shot. The WiFi remains available, because that is what Access Point means ("access to WiFi")

This brings up the question as to why use a static IP, which according to the manual is not the preferred method for setting up an AP. Just trying to understand things before I move forward.

So you'll know how to access the MRs web page as the "Static" IP configuration won't change. Dynamic, there is the possibility that the IP address can change from the host router.
I use the Static configuration all the time when I use AP mode. I know where the WEB UI is when needed.
"Not preferred" as the static configuration is a more advanced configuration, while the Dyamic is easier for the less advanced user. Otherwise, Static is good to use if you userstand the configuration and how to use it. Why I drew up that FAQ for it, to help others.
Up to you how you configure the system though. Good Luck.

Not aware of a video, but page 83 of the User Manual provides information on this topic:
