Hi, I am curious on what type of Cat cable comes with the Powerline Adaptor 1200? For instance is it a CAT5/CAT5E or a Cat6 cable. I tried to find out and nowhere on the box or anybody in support has...

It's probably a Cat5e cable. Even a Cat5 can handle Gigabit at short distances. You can always check the link speed on your PC.
Powerline is notoriously sensitive to electrical noise on the AC lines. A nearby refrigerator, washer or dryer can wreak havoc on speeds.
I would temporarily connect the PC directly to the router and run a speedtest. This will help you determine whether Powerline is the culprit.
