I also took the plunge and and replaced the E5300 in a Pro 6 with an E7600 (SLGTD). I'm too an using the stock cooler and the idle as well as pegged at 100% (intentionally) temperatures seem to be really close to the stock CPU (even slightly cooler). I used Arctic Silver 5 heat sink compound as I have always had good luck with it in the past.
This really gave Plex new life. Even the screens while browsing are faster and more responsive, and anything that needs to be transcoded starts within a few seconds.
Very happy with the new CPU ($49.00).
