How to share a subfolder ~and~ share the root folder too
How do I share a subfolder, while maintaining a share for the root folder?
share the root folder (ie: //files)
share the subfolders (ie: //files/user1, //files/user2, etc).
This would allow me (the admin) to access ALL shares at once for backup purposes, but still restrict each user to their own folder / share.
I know, I know..... you can restrict this with Windows permissions, but my current server has shares for each user UNDER the root share. I would love to be able to configure my new NetGear identical to my old server (non NetGear), mirror the old server to the new server, rename then, and then swap them. This way I don't have to reconfigure the share on every computer that accesses the file server.
Yes, I can set up shares for each user to accomplish this, but I want a share for myself that encompasses ALL the shares to allow me to backup everything at once, with one script.
Is this possible?

You can't share a subfolder of a share, but you might not need that to accomplish your goal.
With NAS admin credentials you can mount the full data volume and see everything in it. For instance,
net use t: \\nasipaddress\data /user:admin nasadminpassword

Your solution solves ~that~ issue, but I have to wonder why NetGear doesn't allow that. My old SnapServer (running Guardian OS) allows me to create a share, and specify the any folder ("/", "/files", "/files/user1", etc).
