An RN214 is a good choice for what you have in mind. It will run plex (and can do some on-the-fly video transcoding.
You can access files remotely through ReadyCloud (though I use openVPN for that myself - it will reach my laptop, android phone, and ipad).
You should also make sure you put a backup strategy in place- RAID is not enough to keep your data safe. You can use USB drives for backing up your data.
