HGST used to be Hitachi, but later got sold off to Western Digital. The drives should work, and most reports on deskstar drives here have been positive. Other good choices are WDC Red and WDC Red Pro.
Starting three drives is certainly viable, but it would be more economical to go with 2x4TB drives. Not only is the initial outlay less, you have more room for expansion later.

Personally speaking the WD reds are great drives. Any manufacture that lists NAS storage as its primary role is a good choice. From there it comes down to price and performance - comfort more or less. Your choice. I have had great success using WD Reds 2 TB and recently over the past few months upgraded to the WD 6 TB reds.

Yaeh so far so good. I bought 2 WD Reds 4TB. It's been a LONNGGG weekend uploading all my thumb drives and smaller NAS drives to consolidate! Once that's done I'll start my media collection... This is going to take forever!
