I seem to have found a solution:
If I create a new share with exactly the same settings as the problematic share, then copy the contents of the problematic share to the new share, everything works perfectly.
I'm not going to pretend to understand why, but the "incorrectly ordered permissions" problem seems to get sorted out when the files & folders get copied from the problematic share to the new share.
