When you select "share listing", you should see a list of share names, with icons next to each. The icons are labeled - for instance CIFS NFS FTP/S HTTP/S.

How do I enable the recycle bin?
And where will I find it once enabled?
Assuming CIFS has been enabled as a file protocol (under services), you click on the CIFS icon right next to the share name. At that point you will get a tab view, with one tab for each file protocol + a tab for advanced. The tabs are across the top.
When the CIFS tab is selected, you scroll down a bit and you will see the recycle bin options.
