How to set up my networks to access my NAS with ReadyCloud

Understood on the double-NAT. Here is what I am trying to accomplish.
I am in Europe (The Spectrum is actually a Vodaphone Cable Modem now) - no idea how to set it up in pass-thru mode. It doesn't allow me access to the same level of features that the Spectrum did in the US - which I did have set to pass-thru.
I have one router connected to the modem which is running DD-WRT and OpenVPN with ExpressVPN to provide a US IP so I can maintain my US Netflix, Prime, Hulu etc.
I have my orbi router connected to the modem which provides ALL my normal connectivity in the house (that dosn't require a US IP) - both WiFi and Ethernet through the satellites (the NAS for instance is connected to the Orbi network through ethernet and a satellite.
I guess what I'm asking is - if I can't use pass-thru on the modem - how can I maintain two routers on the network (one for my OpenVPN; one for all my other connectivity)?
Can you give me some examples of IP gateways/subnets/modes I can use?

Look, the "if" part can be done - most likely your ISP can change the cable device (modem/router combo) to pass-through mode, so you can connect _one_ router, using the one and only public IP (or a CGN - Carrier Grade NAT as most European providers are short of public IPv4 addresses) available. That's nothing different from Spectrum where you only get one public IP.
if you insist using your both routers as routers (one for plain internet LAN, one for the US OpenVPN and US-LAN), there is no other choice than keeping the cable device in router mode, operating an intermediate network, on any private lan subnet. The OpenVPN popularity does come from the fact that it's very NAT tolerant - specifically different from classic IPsec.
For ReadyCloud - this is a pure cloud system where the NAS does establish kind of a "tunnel" config to the ReadyCloud server. It does not matter if there is a public routeable IP on the cable Internet, if it's a CGN address, and if there are one or two more NAT routers in the data path at your site. As StephenB already said: If the NAS network interface is configured to the network it's connected to - it will work, it will be able to rech the Internet, and ReadyCloud will work.

My cable modem is 192.168.0.1 (subnet 255.255.255.0) and my orbi router is connected via static IP at 192.168.0.2. My Orbi Router LAN is set to 192.168.200.2 and up,

...except of this part! To work with your NAS on the Orbi router LAN, it's interface must be configured into the same subnet. Change this config e.g. to DHCP, and make a reservation so the Orni router DHCP will always assign the same LAN IP (including mask, subnet, default gateway, and DNS).
To avoid any confusion, I would strongly suggest using a different subnet on the DD-WRT router serving the US-LAN.
