I can't regain ownership of files

I have reset the owner to admin/admin across the shares.
Just another quick question...
I select the check box "Specify permission when new file/folder is created...." in the default access card on the share
and choose Folder owner/folder group (admin/admin) as the default permissions.
I then upload a file using my own username, check the owner via putty and notice it doesn't change the file to admin/admin it stays as my name/my group of my username.
Am I misunderstanding this default permissions card?
