NV+ v1, Can/should I boot it without drives??

It won't boot all the way, but RAIDar will see it, and at least give you a "no disks installed" status. I suspect it will not tell you the firmware version installed, however it is easy to try. If the NAS is powered down when you remove/reinsert the drives, the test should do no harm.

BTW, knowing the OS in the flash is not very useful, when disks are inserted, the NAS boots from the hard drive.
Rebuild it how? The OS partitions and data on on the 500 GB drives. If NAS-A boots with the 2TB drives, then it should boot with the 500 GB drives.

Since that fails, then it seems likely that is something going on with the hard drives. You could attempt to do an OS reinstall from the front panel. You could also try testing the 500 GB drives on a PC with the vendor's diags, and confirm that they are all ok.
When you installed the 500 GB drives in NV-a, was the NAS powered down?
