I'm not sure what went wrong over Christmas. I don't think it switched raid formats on you, I think something else happened. If you still have the disk, it might be possible to recover the data somehow.
With the new drives, you were re-installing from scratch, and not upgrading. The default raid format is xraid.
xraid is probably the right default for most users. If you were to add a second drive, you would get raid protection (instead of more capacity). If you never plan to add a second drive, then you can just leave it. (Though I guess you actually do have 2 drives installed, despite note 2????)
Or you can redo it (within the 10 minute window), but it requires another factory reset.
