The GS108T is a managed switch, meaning it has a web page to configure it. (I have a GS108Tv2 btw). The ethernet frame size is on the "switching" tab, and can be set between 1518 and 9216. 1518 corresponds to a 1500 byte MTU (the ethernet frame size includes an 18 byte ethernet header).

By default the GS108Tv2 has jumbo frames turned off - so if you never configured it, you actually don't have jumbo frames available on your network.
Also, the GS108Tv2 has global flow control turned off by default. This should be turned on. The control is called "Global Flow Control (IEEE 802.3x) Mode", there is a flow control menu item right below "port configuration" on the switching tab.
BTW, the switch also keeps statistics for each port, which might also be helpful in figuring your throughput issues out.
