Have you had any warnings in the log or via email that the OS (root) volume is filling up? An OS update needs space to work, and a too-full OS partition can cause a failure to update.
How much RAM does your Ultra have? We recommend at least 2GB for OS6. And while I'm not aware that 6.10.5 has now crossed the threshold that it's necessary, it could be a factor.
A USB recovery re-writes what's in flash, which then still has to be written to the drives. Trying it could cause more harm than good, especially if the OS volume is too full.
I recommend you remove all drives (with power off), labeling them so you can put them back in the same order, then use a scratch drive you don't care about the content and see if the NAS can initialize the OS on it. If it can, than USB recovery isn't the solution. If it can't, then do the USB recovery with the scratch drive still in it. Once you can get a valid 6.10.6 volume on it, swap the original drives back, again with power off.
If the NAS has no issue creating a volume on the scratch drive, then the problem is with your volume (the OS one, most likely), not the NAS hardware. You can come back here for more help foir that situation, but getting by that is a lot trickier. Note that it's unlikely that the upgrade itself is mainly responsible for an issue with your OS volume, it just pointed out an issue already there or was the last straw in an already vulnerable situation.

It worked with disk 1 removed. It booted properly and I could reattach disk 1.
Another problem is that I can’t install any applications since a while. Restore the settings could help, but the data is away then…
Any idea?

One way to check it is to download the log zip file, and look in volume.log Scroll down to this section:

/dev/md0 is the OS partition.
