I suggest testing the disks with Seatools in a Windows PC.

Well, that's not disks...
I use Seatools to check disk and they are ok
I then try new disks (same ref than old ones that former work well with the NAS)... same problem :
Reboot in restore mode, got to 67% in a few minutes then stuck there, hearing disks working (now they are stuck for 27h).
Another idea ?

Not great news, hopefully not something going on with the SATA interface in the chassis.
Have you tried doing another factory default with only one disk in place? If that works, then add one disk at a time (waiting for resync to complete), and then add the next.
Are these NAS-purposed (Ironwolf) or enterprise class disks? If they are Barracudas, then it would be good to confirm that they are not SMR.
