The streaming part can be done by ReadyDLNA on the NAS. But the controlling bit might be a bit of a problem, I'm not sure if the PS3 supports this, and you need a UPnP/DLNA Controller to do this on your laptop.
So you would have 3 things:
DLNA Server (ReadyNAs with ReadyShare)
DLNA Client (PS3)
DLNA Controller (some program on your laptop)
I'm doing this at home for video with my own NAS, TV as client and my android tablet as the controller.
