Ok.

Which Roku model? Did you intend to connect it wirelessly (to
whatever)? What is your (unspecified) "Router"?Generally, the only thing which you'd connect to your modem would be
your router (WAN/Internet port). Any client device (like, say, a Roku
box) would be connected to the router (LAN Ethernet port or wireless
LAN).> [...] Tried connecting device with HDMI cable but with no success

video display from the thing on your TV, then a network connection would
seem to be the least of your problems.
Please post a copy and paste of the modems connection status and event log page.

Have the ISP check the signal and line quality UP to the modem. Be sure the ISP provisions the modem correctly.
Be sure there are no coax cable line splitters in the between the modem and ISP service box.
Be sure your using good quality RG6 coax cable up to the modem.
Start with removing any amplifiers, signal attenuators, or splitters from the coax.
From there check the line for kinks, damage, moisture in the line.
Check the connectors for improperly made ends, foil touching the copper coax line, loose connections, bad/old/cheap connectors, or corroded connections. Replace them if you do.
Be sure to power OFF the modem for 1 minute then back ON.

EAX80 would be a good match for a extender.
What is the size of your home? Sq Ft?

You were offered a link that seems to go nowhere. So I can't check to see if it answers your many questions.

Is there possibly a way install my paid VPN service (IP Vannish) into this newly obtain R7000 router?
The best people to answer that are the VPN makers. They know if you need custom firmware (some do) or how you need to configure a router. If it does need firmware, then Netgear can't, or won't help you.
The AP mode suggestion may be there because you don't want to have two routers on your network. But AP mode kills features that may get in the way of VPN operation:

That depends on answers to earlier questions.
If so, any recommendations or websites showing how to configure the R7000 with my IPVannish account?
Do you mean IPVanish? Neither IPVannish nor IP Vannish (see above) seem to exist.
If so, try this:
Search - NETGEAR Communities – "IP Vanish"
See here:
Possibly workable as a firmware install for your main router. Doubtful for a device configured as an access point.

That's what I found.
mfranch87 used slightly different variants so I wasn't sure.
Has links to help on using Netgear routers with third party firmware.
