Default Gateway
I have two GS748T switches that I am using to create a LAN. The LAN will not be connected to the public internet. What should I set the default gateway to? Is a default gateway necessary in this case if the switches share a subnet?

If there is really no firewall or router allowing connectivity to other IP subnetorks, reserve an IPv4 address (organisational, typically .1, sometimes .254) form the IPv4 subnet used on that LAN, and enter this address in the switch (and the connected devices or IoT).
