Access point or router for Wifi extension.
Stupid question, but once you have Orbi setup do you use the orbi wifi access or the xfinity access as the default. That is not completely clear. It looks like orbi replaces xfinity as the wifi default access point and does not replicate it throughout the house. It is the orbi wifi that is the default wifi access point. Am I correct?

You are correct. The built-in access point that comes with your Xfinity interent should typically be turned off and you use your Orbi's wireless network instead. The Orbi is not a wireless repeater.
If you had some specific needs, you might want two separate wireless networks, but that's uncommon.
The most common scenario is that you disable the Xfinity modem/router wireless and only use the wifi provided with the Orbi's.
