prevent NDI stream discovery
How would I prevent discovery of NDI streams going through an m4300 switch by other clients on the switch?

By properly configuring and managing all NDI devices, by using the NDI Tools - Access Manager. This is sometimes named NDI Group Privacy, too. FMI: ndi.video
Aside, similar (but more challenging and effort required) for DANTE, too.
