No need to apologise. Everyone here bought their first NAS at some point and this forum is here to help people like you.
1. To wipe the disk, you should factory default (with the disk in the NAS): http://www.readynas.com/forum/faq.php#How_do_I_reset_the_ReadyNAS_to_factory_default%3F. You can't move a disk from a PC or USB enclosure into the NAS or vice versa without needing to wipe it: http://www.readynas.com/forum/faq.php#Can_I_use_the_disk%28s%29_that_were_previously_used_in_a_PC%2FMAC%3F.
2. You can take a look at the manuals: http://www.readynas.com/docs, the FAQ (see link fourth to the left of the top right of this page).
Shares are folders on your volume that can be used to separate out your data e.g. to have different permissions for different users, or just to keep it organised.
CIFS is Windows File Sharing, AFP is Mac, NFS is Linux, Rsync is great for incremental backups using Linux.
If you need to get data off the disk you may need to try some data recovery software.
One more thing, what size is the free disk. If it is less than 700GB you'll need to put it in the NAS before the 700GB disk as you can't add smaller capacity disks.
