Dear all I was wondering if anyone can help!? Basically I have a readynas stuck booting! If I remove any of the disks (doesn't matter which one) the device will boot and I get my IP address displaye...

Not sure what version the NAS Drive is but going based on the following website www.rnasguide.com it looks like the NAS Drive is V1. On the back of the device it only says RND4000 and on the front ReadyNas NV+.

You could try a 3rd party data recovery service that does data recovery for Linux Software RAID. Note this can be quite expensive and may ultimately be unsuccessful.
Using X-RAID one of the disks (usually disk 4) is the dedicated parity disk. It has no partition table on it. It may appear to be blank, but it isn't.
