While a new NAS is likely a good forward plan, I believe that SMB1, used only on a local home network that is properly secured (no holes punched in the firewall), does not bear the level of risk Microsoft would have you believe. I'm sure protection from lawsuits is a big part of the reason for the harsh wording.

I agree, though you do need to enable it with both Windows 10 and Catalina MacOS (not sure how to do that with MacOS).
FWIW, the risks are much higher in enterprises. Microsoft accelerated their deprecation of SMB 1 in response to WannaCry - which did exploit the security weaknesses in the protocol.
