Add-ons are installed via System > Update > Local in Frontview (web-interface of the ReadyNAS) on Sparc ReadyNAS. You upload the ".bin" file you download from the web.
To change the RAID setup yes you would need to wipe all the disks. However if using X-RAID, I don't see why you'd want to do this as you can expand an X-RAID array. See X-RAID — RAID for the rest of us
