How come that Orbi RBK853 have the older firmware (3.2.16.22) on the official Net Gear website while all other RBK85X has the newer version 3.2.17.12?

Because whoever at Netgear is supposed to update the web site "missed it". The actual products are RBR850 and RBS850. This happens a lot. I have seen the RBK50 (package) show newer firmware and the RBR50 show older firmware for several days.
As to whether it is important, desirable, or wise to update firmware... that is a messy can of worms.

You can manually update the system if you like.

Update the RBS first then RBR lastly using wired PC or laptop.
