Additional extender clarification

I've been searching these forums and find unclear answers to what should be a simple question:

I've got a EX6100 – AC750 Dual Band WiFi Range Extender that I've been using without problem for months, but there is an area of my house that is still not well covered. If I buy a 2nd one, can I set it up (connected to the router, not the extender) by creating a new SSID that is different from the existing extender? Will that work? Or do I need to change to a "Mesh" system?
