Is the AC1900 Nighthawk (R7000) compatible with the AX6000 WiFi Mesh Extender (EAX80)?

Should be however may not be using the full capabilities of the EAX extender with the R7000 router. EX7500, 7700 or 8000 maybe a better fit with the R7000. Or you could disable the wifi radios on the R7000 and setup the EAX in AP more for more inproved wifi.

yes, you can use the EAX80 with the R7000. ]
Question is do you plan on updating your router in the in the near future?
If so, then getting an extender that is far beyond the capabilities of the R7000 might be fine.
If you're not planning on upgrading the router, then @FURRYe38 is right in that there are better extenders for that model.
The R7000 would be the bottleneck in the connection and the EAX80 wouldn't perform any better than the EX8000 (actually would probably be slower because it doesn't have the dedicated backhaul of the triband extenders)
Or you could upgrade the router first and see if it meets your needs.
Or you could check into switching to a mesh system.
