I have a ReadyNAS 2120 v2, how can I automatically start my ReadyNAS 2120 v2 after restore electrical power?

Which firmware are you running?
There is a known issue with 6.4.0 and 6.4.1 for the 100 series and 2120 which will be fixed in the next beta firmware release 6.4.2 Beta 2. Please keep an eye on this thread (you can subscribe to it): ReadyNASOS 6.4.2-T59 (Beta 1)
On our ARM models the power defaults to "last state" when the power is restored, but as I mentioned above this is not working for the 100 series and 2120 in 6.4.0 and 6.4.1.
