EX2700
Have 2 repeaters _ext and _EXT. want to add a third, but just seems to replace one or the other.
How do I change the new one to the suffix to _EXT2 and have a third in service?

ouch. I usually don't recommend using more than 1 extender.
If you're needing more than 1, I usually recommend moving to a mesh system.
And I'd hope you're not daisy chaining them. If so, you're throughput will be atrocious.
If you're adding another, simply power off the other 2 and then use the installation assistant to install the 3rd one. Once installed how you want it, turn the others back on.
