Looking for the best wireless that fits our needs

We apparently have to many things on our router and I won't load many things anymore.
Internet provider suggested nighthawk wireless
We have
2 xbox one
4 smart TV
3 computers
1 Mac ( not always online )
5 phones
3 watches
2 tablets
2 wi fi security cams
1 roku

Help please what should we get

For AC router, I (and many others) recommend the R7800 (especially with Voxel's firmware). For AX, look into the RAX120 and RAX200

I am unsure what AC and Ax are really. I just know we need faster and more consistent wifi and wired internet.

AC is WiFi 5 while AX is WiFi 6. The latter is supposed to be faster but has a slightly shorter range than AC.

We have 2 different channels one is regular and one is 5g does that matter for a router ?

Most routers today come with 2 (or 3) channels. 2.4 GHz reaches the farthest while 5 GHz has a shorter range and penetrates walls somewhat difficult. However, it is (much) faster than the 2.4 GHz channel. The same is true for AX (6 GHz).
