I own the EX7700 & added the EX800, now I'm having Internet drops

I own the Nighthawk XR700 router and about 8 months ago I added the EX7700 to get a better signal in my back office. It's worked great but I was still getting weak signal on wifi calling in my master bedroom so I purchased an EX8000, put the EX8000 in my office and moved the EX7700 to our master bedroom.
Since doing this I've noticed I'm getting drops periodically where my wifi goes away on my phone, then pops back up when I'm somewhere between my two mesh extenders. I'm assuming have two mesh extenders in a 2,000 sq foot home may be causing them to either connect to each other using our one SSID or my phone is trying to switch between the two extenders which is causing a temporary drop.
I'm going to disable the EX7700 and see if that fixes the issues I'm now having. Everything I've said we can use one SSID for both extenders and router but I'm not sure if that's the case since there's signal overlap between the two extenders.
Any help would be greatly appreciated! Thanks!

Not sure where you got that info from.
If you're using more than a single mesh (single ssid) extender on a network, you either need to make sure they aren't in range of each other or you need to have seperate ssid's. You can leave one of them with the same name as your router but switch one of them to its own individual ssid.
Otherwise you get issues with one (or both) trying to connect with each other. And if you're home is 2000 sqft, they'll see each other.
Whenever people need more than a single wireless extender and want to maintain a single ssid, I usually recommend moving to a full mesh network as its designed for this purpose.

I said “said” and I meant “seen.” When I said I’ve read that you can have two extenders on one network was meant if you don’t have over lap in their signals (based off of what I read on the forums here).
Anyway, that being said, is it possible to create a full mesh network with the setup of extenders and router I have? I saw you mentioned that as a solution.
For now I disabled my EX7700 and I’m just running my Nighthawk XR700 with the EX8000.

The mesh extenders aren't a true mesh setup. its kind of a hybrid. You can't really create a full mesh network setup using multiple extenders and a router that isn't designed for it. They work great when its just a single router and a single extender. As you've found out, it gets more complicated when you add a 2nd extender and they can pick up the other extenders signal.
A true mesh network is something like Netgear Orbi or a different vendors mesh solution.
You can keep using your EX7700 but all you'd need to do is change its broadcast ssid to something else from your main router and the EX8000.
You didn't put what router you have but if its not the best router, potentially you could shut off the routers wifi and put the EX7700 or EX8000 in ap mode and use the other extender to connect to that. They both have pretty decent radios in them and are triband. Maybe you'd get better coverage this route. Not sure though and it might take some experimentation.

I think you may missed what router I had, it’s the Nighthawk XR700... listed it up above. It’s a fantastic router, I have gigabit internet and it does the job.

My long-term goal is to have a wide reaching network once I move my office out of my house in to a finished tuff shed in my backyard, so it’s sounds like I either need to buy a proper mesh network or bury an Ethernet cable from my extender out to the my new office (which will be closest to where the EX8000 is).

I'd bury the cable. The time you spend to bury your own cable will be worth the performance and hassle of fighting to get stable internet in detached locations.
