I have a ReadyNAS Duo - I can't log into it anymore, but can still access the files and put new one on it.
I was wondwering can I take the drives out and pop them in to a USB caddy and still have access to the files on the drives.

Actually you can. There's a long thread here that gives you options.
Posts 1+5 give you one option.
Another is to use FireFox. Set security.tls.version.min to 1 (browse to about:config and search for the setting).

Yes I know about the thread you posted - but it's not an answer to my question. So not really that helpful....

Then better describe how you are unable to log in and we can offer other possible solutions.
The drives in your NAS are Linux formatted using LVM. There are methods you can use to access the files on a Linux or Windows system, but they are best just used for data recovery, not replacement of the NAS. And since you already have access to your files so you can back them up, you don't need to do that.

It seems impossible to get a straight answer to a question!
Can I pop the 2 drives into a usb caddy and still have access to the content/file?

Sandshark did address it - the simple answer is no. Technically it can be done if you are using Linux, but not with Windows or MacOS. Which is why I focussed on fixing your problem with logging in.
What you can do is copy the files to a new drive. Based on your questions, you have no backup for the files, so that is something you need to do anyway. RAID-0 has no redundancy at all, so if either disk fails you will lose all your data.
